You can recognize real balsamic vinegar by the refined diversity of flavors and aromas. Some flavors are drawn from a rare wood of wood where the juice is aged: oak, ash, acacia, mulberry, chestnut, cherry and juniper. To get the real taste, Balsamico needs a lot of time: pressed grape juice, fermentation and a long ripe time. First the juice is slowly cooked on low heat for 24 hours so that the juice turns into wine. Sugar is converted into alcohol. Then the juice goes on the fire to evaporate well into a concentrated syrup. It is aged in wooden barrels for at least 12 years. During ripening, the barrels are open to turn the net fermented grape juice into vinegar. As soon as there is room in the barrel, it is topped up with a younger vinegar from another barrel. For example, the balsamic vinegar absorbs the flavors of each type of wood during its more than ten years of journey. And you taste that! Unlike wine bottles, the barrels with balsamic vinegar are not stored in cellars, but in the attic. Due to the natural temperature changes on these so -called acetaia, the balsamic vinegar comes in nicely and gets the right quality.
